Oatmeal Cookies


Since I just started my blog today, I am dying to add another post, or maybe I just need an excuse to bake. This recipe for oatmeal raisin cookies is a healthier version of the Starbucks Outrageous Oatmeal Cookies. I just finished baking the first batch and they turned out pretty well. The flavor is amazing, but I'm not sure if texture is perfect. I may try a few modifications next time to try and get the texture just right.

INGREDIENTS
1 1 ⁄2 c old-fashioned rolled oats (not quick-cooking)
1 ⁄2 c flour
1⁄2 c raisins, cranberries, dried fruit or chocolate chips
1⁄4 tsp baking powder
1⁄4 tsp baking soda
1 ⁄2 tsp salt
4 T butter room temperature
2 T unsweetened apple sauce
1 ⁄2 c packed brown sugar
1 T granulated sugar
1 T stevia
1 large egg
1 ⁄4 tsp ground cinnamon
1 T pure vanilla extract

DIRECTIONS
Preheat oven to 350.˚ Mix oats, flour, dried fruit, baking powder, baking soda, and salt. In a separate bowl, beat butter, applesauce, sugar and stevia until light and fluffy. Mix in egg, cinnamon and vanilla. Add oat mixture and beat until combined. Drop dough by rounded tablespoonfuls onto baking sheet covered in parchment paper. Bake about 12 minutes or until edges lightly browned.
